1 pkg. Deli Roast Beef
roughly chopped
white corn tortillas
heirloom tomatoes
Cabot Monterey Jack cheese shredded

FOR THE TACOS: Roughly chop sliced roast beef and add a pile to each tortilla. Sprinkle with shredded Monterey Jack and chopped cilantro.

FOR THE HEIRLOOM TOMATO SALSA: To make the heirloom tomato salsa, combine diced tomatoes, scallion, cilantro, and the juice of one lime. Mix in desired chopped jalapeno peppers with seeds removed.
