roughly chopped |
| white corn tortillas | |
| heirloom tomatoes | |
| scallion | |

| Cabot Monterey Jack cheese shredded |
FOR THE TACOS: Roughly chop sliced roast beef and add a pile to each tortilla. Sprinkle with shredded Monterey Jack and chopped cilantro.
FOR THE HEIRLOOM TOMATO SALSA: To make the heirloom tomato salsa, combine diced tomatoes, scallion, cilantro, and the juice of one lime. Mix in desired chopped jalapeno peppers with seeds removed.
