1 pkg. Hickory Smokehouse Uncured Ham
roughly chopped
sprouted corn tortillas
heirloom tomatoes
queso fresco

FOR THE TACOS: Roughly chop sliced ham, warm in a sauté pan, and add to each tortilla. Top with queso fresco. Fry eggs, sunny side up, and add one per taco.

FOR THE HEIRLOOM TOMATO SALSA: Combine diced tomatoes, chopped scallion and cilantro, and the juice of one lime. Mix in desired chopped jalapeno peppers with seeds removed. Garnish with salsa and additional chopped cilantro.
